New Food Hygiene Legislation
In January 2006 new food hygiene legislation and requirements came into force.
This legislation affects all food businesses including caterers, primary producers (e.g. farmers), manufacturers, distributors and retailers.
In brief, the main new requirement is that food businesses must be able to show how they ensure the food they make or sell is safe to eat and have this written down in the form of a food safety management system.
There is no requirement to use any particular type of food safety management system, so some businesses will already have a suitable system with little or no change.
Safer Food Better Business pack
For those who require more help and guidance, the Food Standards Agency has produced the ‘Safer Food Better Business’ (SFBB) pack, one aimed at caterers and the other specifically for retailers.
This pack has been developed through working with catering businesses and is designed to be practical and easy to use.
The packs are based on a simple series of fact sheets that tell you how to ensure that the major potential hazards can be safely controlled and a diary which can be used to record appropriate opening and closing checks and any problems that happened and most importantly what was done to rectify the problem.
Using this pack will help you to:
comply with the new regulations
show you what to do to make food safely
train staff
protect your businesses reputation
improve your business e.g. by reducing food waste
